CRISPY GARLIC PARMESAN SALMON RECIPE

INGREDIENTS
2 lbs. (1 kg) wild salmon side fillet (approx. 2 kg | 4 lbs.)
2/3 cup plain breadcrumbs
2/3 cup grated parmesan
1/4 cup finely chopped parsley
4 garlic cloves, minced
1/3 cup melted butter
Salt and pepper
Lemon wedges to serve
INSTRUCTIONS
- Place a rack in the middle of the oven. Preheat oven to 400 ° F | 200 ° C. Align the baking sheet / sheet with a large piece of foil. Put the salmon filet skin down on a baking sheet; set aside.
- Combine breadcrumbs, parmesan, parsley and garlic in a small bowl. Pour with melted butter; season 3/4 teaspoon of salt and 1/3 teaspoon of pepper (or to taste). Using your hands (this is easier than using a wooden spoon), mix the ingredients until the breadcrumbs absorb oil (about 40 seconds).
- Pour the mixture onto the salmon, pressing it to the top until the filet is completely covered. Spray salmon lightly with a spray of vegetable oil to obtain golden crumbs.
- Bake uncoated for 12-15 minutes (depending on the thickness of the fillet) until the crust turns golden, and the salmon is cooked and flakes easily with a fork.
- Serve with lemon wedges and squeeze the lemon (optional). Serve with salad, stewed vegetables, rice or mashed potatoes.
