INSTANT POT HONEY TERIYAKI CHICKEN
The bold and delicious Honey Teriyaki Chicken instant noodles made in your pressure cooker effortlessly using just a few storage ingredients. This is an indispensable dish for the whole family to please even the most demanding eaters!
Ingredients
4 skinless chicken breasts (or 6 chicken thighs) see Note 1
1 cup soy sauce (I use low sodium)
1/2 cup water
2/3 cup honey
2 teaspoons minced garlic
1/2 cup rice vinegar
1/2 teaspoon ground ginger
1 / 4-1 / 2 teaspoons of crushed red pepper flakes use 1/2 teaspoon for a more noticeable touch of heat
3 tablespoons of corn starch + 3 tablespoons of cold water
2 teaspoons sesame seeds
diced green onion, for topping
steamed white rice or fried rice, for serving
Instructions
- Put the chicken in a pressure cooker. Beat together soy sauce, water, honey, garlic, rice vinegar, ground ginger and chopped red pepper flakes. Water the chicken.
- Put the lid on the pressure cooker, rotate the ventilation hole to close. Press “Cook under pressure” and set the timer for 35 minutes for frozen chicken, 30 minutes for defrosting. When the pressure cooker emits a beep signaling the end of the cooking time, allow the natural output (otherwise do nothing) until the float valve drowns.
- Remove the lid, transfer the chicken to a bowl and chop with two forks. Use a slotted spoon to remove any remaining fat in the remainder of the pressure cooker from the chicken. Set the pressure cooker to the “soup” position. Once the liquid boils, mix the corn starch and water and beat in the sauce until thickened. Stir in sesame seeds.
- Turn off the pressure cooker, transfer the chopped chicken back to the pressure cooker and mix to grease the sauce. Garnish with chopped green onions and serve steamed or fried rice.
Notes
- When using very thick slices of frozen chicken (more than 1 1/2 inches thick) add 10 minutes to the time of cooking. If you use very thick pieces of thawed chicken, simply grind the chicken to a thickness of 1 - 1 1/2 inches before continuing with the recipe as written.
